

Ingredients
• 500 gms carrots, grated
• 150 gms sugar
• 50 gms almonds
• 50 gms cashew nuts
• 250 gms desi ghee
• 1 litre full-fat milk
• 4 to 5 green cardamoms, ground
• Optional: Raisins or other dried fruits
Preparation
1. Cooking the Carrots:
• Grate the carrots and steam them in a cooker. Wait for one whistle.
2. Boiling with Milk:
• Transfer the steamed carrots to a pan. Add milk and give it a nice boil.
• Keep cooking until the milk is fully absorbed and dried in the carrots.
3. Adding Sugar & Ghee:
• Add sugar and ghee, stirring well.
• Let the sugar fully dissolve and get absorbed into the mixture.
4. Adding Dry Fruits:
• Roast almonds and cashew nuts separately, then add them to the halwa.
• Optionally, add raisins or other dried fruits for extra flavor.
5. Final Touch:
• Grind the cardamom and sprinkle it on top as a garnish.
Your seasonal carrot sweet pudding is ready to serve hot!
